| ITALIAN MEATBALLS 1 lb. lean ground beef 2 eggs 1 tsp. garlic salt 1/2 tsp. ground black pepper 1/2 tsp. dried oregano (crush it in your hand before adding it in) 1/2 tsp. dried parsley (crushed) 2 tsp. dried basil (crushed) bread crumbs (fresh) 2-4 Tbsp. fresh grated Parmesan cheese Beat eggs in a large glass bowl with a fork, then blend in the spices and cheese. Add breadcrumbs until the egg mixture is absorbed. The mixture should be moist but not runny. Blend in the meat, first with the fork, then with your hands. Form meatballs and bake at 375 until brown. I skip the oven part and I microwave them on a "microwave bacon cooking pan" for 2 minutes, then turn them over and micro for 2 more minutes. That's 4 minutes total for each batch (2-3 depending on the size of the meatballs and the size of your microwave.) |
