| MEAT BALLS 1.5 lbs ground beef 2 eggs 1/2 cup parmesan cheese 1 TBS chopped parsley 1 clove garlic, minced (I used garlic salt and omitted the regular salt) salt and pepper (Mary Ann also used 1 cup dry bread crumbs and 1/2 cup milk. I left them out and they made up just fine.) Combine all ingredients. (I mixed them up with my cookie dough beater in my Kitchen Aid mixer.) Dump it out on a cookie sheet, and pat into a square or rectangle about 1 inch thick. Use a table knife to cut rows in the meat, to make squares about 1 inch by 1 inch. Shape these into balls and put into a pan (I used the broiler pan--just the bottom pan, not the thing with the drain holes) and bake ate 350* for 15-20 minutes until done (break one open to check). . |
