BEEF FAJITAS

1-1/2 lb  beef skirt steak (trimmed of fat)
1/4 cup olive oil
juice of 2 limes
1 Tb cilantro, chopped coarsely
3 cloves of garlic crushed and chopped fine
1/2 tspn of black pepper
1/4 tspn of salt
8-12 large flour tortillas

Directions:
1) flatten and tenderize the meat with a meat mallet.
2) Mix the oil, lime juice, cilantro, garlic, black pepper and salt in a glass bowl, and put the sliced meat in it.
3) Marinate the meat for at least 4 hours, to allow for the meat to absorb the flavor.
4) On a very hot griddle or over hot coals, place the meat and allow to cook on both sides. Baste with the marinade as it is cooking.
Note: you can do this on the stovetop in a cast iron grill or on a outdoor grill. But you do require high heat to sear the meat.
5) Remove the cook meat and slice into 1 inch slices.
6) Warm up tortillas prior to serving.

Serve with guacamoles, refried beans, and salsa and warm tortillas.
