QUICK CHOP SUEY

Cook rice.
Saute together:

1/2 lb. ground beef
1 onion, sliced
3/4 c. celery, sliced

Add:

2 c. canned (drain) or 3 c. fresh bean sprouts
2 c. beef or chicken broth
1/2 c. sliced mushrooms

Cover skillet. Simmer 5 minutes.

Combine:

1 T. cornstarch
2 T. soy sauce

Add to beef mixture, stirring constantly until thickened and smooth. Serve over hot rice. This really is quick. I start the rice and by the time it is ready, the chop suey is ready too. Mild enough for children, my dh likes to add more soy sauce at the table
