| Bean Burritos -
1 can (16 oz) refried beans 1 c. cooked rice 2 c. Shredded Cheese, divided 12 Flour Tortillas (6 inches) In a bowl, combine the beans, rice and 1 c. of cheese. Spoon about 1/3 cup off-center on each tortilla. Fold the ends and sides over the filling and tuck together. Arrange burritos in a greased baking dish. Sprinkle remaining cheese over burritos. Cover and bake at 375 for 20-25 minutes. Yield: 1 Dozen Notes: I used the Bearitos Refried Beans and the Sargento Mexican 4 cheese blend. Also, I didn't grease the pan since I use non-stick and they slid off just fine. I put mine in the oven for about 20 minutes on 300 and they turned out crispy. I also put the "flaps" down so nothing would come out. |
