| PINEAPPLE COCONUT SQUARES CRUST 2 TBSP butter, melted 3 TBSP sugar 1 egg 1 C flour 1 tsp. baking powder FILLING 2 Cans (8 ounce) unsweetened crushed pineapple TOPPING 1 TBSP butter, melted 1 C sugar 2 eggs 2 C flaked coconut Mix sugar, butter; beat in egg. Combine flour, b.powder, and salt. Press into 9 inch square pan. Spread crushed pineapple on top. For topping, in mixing bowl beat butter, egg, sugar; stir in coconut. Spread over pinapple. Bake at 325 for 35-40 minutes. |
