YUMMY GRANOLA BARS WITH FLAX SEED
7 cups Rolled Oats
2 cups Ground Flaxseed
1 tsp Salt
1/2 cup Wheat Germ
5/8 cup Brown Sugar

1/4 cup Sunflower Seeds (optional)
1/2 cup Chopped Peanuts (optional)

1/2 cup Oil
1/2 cup Water
1 1/2 tsp Vanilla

1 recipe Marshmallows (from binder)
1/2 cup Honey
1 cup Peanutbutter

1 cup Chocolate Chips (optional)

Combine rolled oats, flaxseed, salt, wheat germ and brown sugar. Mix in the first set of optional ingredients (if so desired). Add to this mixture oil, water and vanilla; mix until smooth. Place in ungreased pan (large roasting pan so you can stir periodically). Bake at 225* until golden brown, approximately 2 - 3 hrs. Leave door open a crack to let moisture out.
At this point you have granola. You can stop here or continue if you want the bars. This part is rather involved.
Make the binder recipe for marshmallows. At the point where you have beaten it throughly, scrape it into a saucepan over low heat (you may want to use a double boiler). Add honey and peanutbutter. Stir the chocolate chips into the granola. When the "sauce" is melted, pour over granola and press the whole thing into a 9x13" greased pan. Cool and cut into bars.

32 bars yield 1T Flaxseed per bar. My girls loved these. My son hated them, the texture was too crunchy for him.
