ANGEL CAKE

1 Cup sifted cake flour
3/4 cup sugar
12 egg whites
1 1/2 tsp cream of tartar
1/4 tsp salt
1 1/2 tsp vanilla
3/4 cup sugar

Sift flour with 3/4 cup sugar 4 times
beat whites, cream of tartar, salt and vanilla till soft peaks form. add remaining sugar - 2 tblspoons at a time - beating after each addition. sift 1/4 flour over whites. FOLD IN. FOLD remaining flour in by fourths. Bake in UNGREASED 10 inch round tube pan at 375 for 35 - 40 minutes. when done cool in pan upsidedown or it will fall.

for chocolate angel cake substitute 3/4 cup sifted cake flour and 4 tlbsp cocoa for 1 cup sifted cake flour.
