Fairy Cakes

INGREDIENTS
100g (4oz) Butter
100g (4oz) Caster Sugar
2 Eggs
100g (4oz) Self Raising Flour
Paper Cake Cases

METHOD
Preheat your oven to 190c or Gas Mark 5 or 375 F (maybe slightly lower for fan assisted ovens)
1. Start by putting each cake case into your cake tin
2. Cream together the butter and the sugar, so that they create a creamy mixture
3. Beat in the first egg (without the shell :P) and then the second
4. Now sieve the flour into the mixture and continue mixing
5. Its important to get air into your mixture so they rise well, and so fold the mixture by turning the bowl on its side and          doing a circle motion with your wooden spoon.
6. Now spoon the mixture into the cases, filling about half of the case.
7. Now put into the oven for 15-20 mins (but keep a check on them, they're ready when they go golden brown)
8. Leave the cakes to cool on a cooling rack

Now you can either ice them like they are or create butterfly cakes!

(this is for butterfly cakes)
9. Cut the top of each of your cakes
10. Now cut that top bit in half
11. Create your icing (not too runny, we want it stiff) and then put a little bit on the top of each cake, where you have chopped the top off
12. Now take the two halves of the top of the cake and put them into the icing so they look like wings.
13. Eat them!!!!

****EXTRA TIP**** If you wanted to add chocolate chips, dried fruit, flavouring etc...you can add it in with the flour and then continue the recipe as normal
