| STRAWBERRY BREAD
From the Kitchen of Anne Dlugosz 3 c. flour, sifted 1 tsp. baking soda 1 tsp. salt 2 tsp. cinnamon 2 c. sugar 4 eggs, beaten (or egg substitute equivalent) 1-1/2 c. vegetable oil 1 c. chopped pecans or walnuts 1-1/2 pints strawberries, washed & stemmed Preheat oven to 350�. �In a bowl, combine flour, soda, salt, cinnamon & sugar; mix well. �In a separate bowl, mix eggs & oil; add to dry ingredients. �Stir in nuts. Fold in strawberries until moistened. �Pour into two greased 9 x 5 loaf pans; bake for 50 to 60 minutes or until toothpick inserted in center comes out clean. �Cool on wire rack. �Makes two loaves. |
