| SPINACH QUICHE
From the Kitchen of Patricia Law Pie crust: 1 c. flour � tsp. salt ? c. shortening (Crisco) 2 T. water Filling: 1 pkg. frozen spinach Nutmeg � container ricotta cheese (or 1 c. cottage cheese) 3 eggs � c. Parmesan cheese Milk Prepare piecrust. Bake 10 minutes at 350�. Thaw spinach in microwave as required (about 4 minutes on high). Add 3 eggs and beat together. Add ricotta cheese, � cup Parmesan cheese, and season with salt, pepper, and a pinch of nutmeg. Add 2-3 tablespoons of milk or more as desired. Spread mixture in piecrust. Sprinkle remaining Parmesan on top and a dash of nutmeg to color. Bake about 30 minutes or until mixture is firm at 450�. (Can also bake 45 minutes at 350�.) |
