| PUMPKIN PECAN CRUMBLE
From the Kitchen of the Santangelo Family 16 oz. packed pumpkin 1 c. sugar 2 eggs 1� tsp. pumpkin pie spice 12 oz. evaporated milk 1 box yellow cake mix 8 T. butter, melted � c. chopped pecans Mix pumpkin, sugar, eggs, pumpkin spice, and evaporated milk. Pour into ungreased 9� x 13� dish. Sprinkle one box of yellow cake mix on top (NOTES: Sprinkle just the powder. Make sure to break it up well � any lumps of cake mix will not bake in � could use a sifter.) Drizzle melted butter over cake mixture, trying to cover as much are as possible. Sprinkle with chopped pecans. Bake in a preheated 350� oven for 50 minutes. It will smell delicious! Serve warm, with cool whip or vanilla ice cream. Serves: 16 |
