| BANANA CHOCOLATE CHIP LOAF
From the Kitchen of Jen and Roy Dry Ingredients: 1 c. whole wheat pastry flour 1 c. unbleached white flour 1� tsp. baking powder � tsp. baking soda � tsp. sea salt Liquid Ingredients: 2 ripe bananas, mashed ? c. oil ? c. maple syrup 1 tsp. vanilla 1 egg� (or 4 oz. tofu blended w/ � c. water) Mix dry ingredients in large bowl. Mash bananas with fork on plate; set aside. Whip liquid ingredients together.� Add liquid ingredients to dry and mix; add bananas and mix to smooth consistency.� Add 1 cup chocolate chips (and nuts if desired). Oil bread pan; fill 2/3 full and bake at 375�F for 45 minutes or until toothpick comes out dry. |
