From the Kitchen of Ann Rakszawski 5-7 tart apples � to 1 c. sugar 2 T. flour ? tsp. salt 1 tsp. cinnamon � tsp. nutmeg 1 recipe Plain Pastry 2 T. butter Pare apples and slice thin; add sugar mixed with flour, salt, and spices. Fill 9� pastry lined pie pan. Dot with butter. Adjust top crust. Bake in hot oven (450�) 10 minutes, then in moderate oven (350�) about 40 minutes. If apples are not tart, add 1 T. lemon juice. Grated lemon peel may also be added if desired. Deep Dish Pie: Bake in pastry lined 6�� x 10�� oblong baking dish. |
