| Ingredients: | ||||||||||||||||
| 1 1/4 cups vanilla wafers, crushed into crumbs Over the top: 4 Tbsp melted butter Crushed chocolate cookies 1 Quart peppermint ice cream, softened Additional chopped pecans 2 squares unsweetened chocolate 1/2 cup butter 3 eggs, separated 1 1/2 cups sifted confectioners sugar 1/2 cup chopped pecans 1 tsp vanilla |

| Instructions: | ||||||||||||||||
| Make crust by mixing together crushed wafers and butter. Press into bottom of pirex dish. Spread ice cream over crumbs and refreeze. Melt chocolate with butter. Add pecans. Stir in egg yolks and confectioners sugar. Stir in vanilla. Cool to room temp. Beat egg whites until stiff and shiny. Fold whites into cooled chocolate mixture until smooth. Spread chocolate mixture over chilled ice cream. |
