	Chicken Mole INGREDIENTS 8 skinless, boneless chicken thighs 2 tablespoons ground cumin 1 teaspoon cinnamon 1 teaspoon ground coriander (cilantro) 1 tablespoon olive oil 1 large onion sliced very thinly 1 28 oz can chunky crushed tomatoes 1 cup chicken broth (low sodium) 2 garlic cloves minced 2 tablespoons minced chipotle chili peppers 1 tablespoon adobo sauce (note canned chipotles are normally packed in adobo sauce it is not something you buy separately) 1 oz unsweetened chocolate, chopped INSTRUCTIONS Coat chicken with cumin, cinnamon, salt and pepper. Heat oil in heavy pan. Add chicken, brown on every side. (5 minutres) Add onions and garlic and saut� until they begin to brown. (3 minutes) Add tomatos, broth, chili pepers, adobo sauce, and chocolate. Bring to a simmer. Reduce heat to medium low and simmer until chicken is cooked through and sauce begins to thicken, about 20 minutes. Season and serve. Print Recipe
