    Sauteed Plantain (sweet)
1 ripe(yellow) plantain cut in half, each half- cut into third lengthwise.
2 t butter or marg.
1/8 c sugar
1/4 t grd.cinnamon
1/4 c water
1)  Melt butter in medium frying pan & sautee plantain slices until golden.
2)  Add sugar, cinnamon, & water.  Cover the pan & cook at medium heat, until the water has evaporated & a light syrup remains.


Cheese-stuffed Tortillas Served with Pickled Veggies

1 c cornmeal dough:  1 part dry, lime-processed cornmeal (Quaker) to 4 parts water
1/2 c white "latin" cheese (clue: 'Queso'.)
1/4 t chopped onion
1/4 t chopped grn pepper
1)  Divide dough in 8 portions; press flat into 2 1/2 " diameter tortillas.
2)  Grind cheese, onion & pepper to form a paste
3)  Place 1 T of cheese mixture on a tortilla & cover it with another tortilla.  Press sides to seal.
4)  Cook on griddle at medium heat until golden on both sides.
5)  Serve warm with pickled veggies on top
