Some of the recipes I have collected were from our students. This one for Chicken Soup comes from Colombia.
Ingredients:
3 chicken breasts (boneless & skinless) 1 chopped onion 2 chopped garlic cloves 1 Tbsp mustard 1/4 cup ketchup 4 carrots - sliced 1 cup frozen peas 1 can green beans (drained) 1 can coconut milk 1 small can cream salt & pepper
Cooked rice
Simmer the chicken in water with onion, garlic, mustard, salt and pepper. When cooked, remove the chicken and cut into bite-sized pieces. Add carrots to broth and cook till almost done. Add ketchup to chicken pieces and mix together. Add to broth along with remaining vegetables. Cook a few more minutes. Add coconut milk and cream. Stir constantly and do not let soup boil.
Cook rice separately.
To serve, Put soup in bowl and add rice to it at the table. |
