It's all about.. well.. whatever I feel like it's about that day.
My Favorite Low Cal recipes/foods

Well, was talking to Amanda yesterday about low cal stuff and thought I'd post on here some of my favorite things I've discovered so far, for those of you who are interested. Some are recipes and some are just stuff you buy.

Strawberries n yogurt.. Yum!  1 c. strawberries (50 cal) & 1/2 c. vanilla fat free yogurt (40 cal) = 90 cal.

Strawberry Allfruit (40= 1 tbl)

Cranberry Almond Crunch cereal (220 1c.) whole grain source and is yummy

6 in. turkey breast on wheat w/ everything cept jalepenos and bananna peppers (280 cal) (add provolone cheese for an additional 50 cal) *no mayo, mustard, oil, vinegar, salt, or pepper... it's still good I promise*

hard boiled eggs! LOL (only 78 calories a piece)

apples (81) Oranges (64) Grapes 1c. (110)

Sweet Freedom Crunch bars... Sugarfree (90) awesomely good for a chocolate fix

Sugarfree Jello Double chocolate pudding cups (60) even better for a chocolate fix w/ less calories.

baby carrots (about 6 cal. a carrot)

frozen green beans hot or cold in salad (1 c. 30)

broccoli flourets (20) dipped in 2 tbs. Italian dressing (light kind) (20)

Asparagus recipe (got this at walmart in the produce department but it was a big hit in my house) Fresh asparagus spears (22 cal in six spears bundle has 10-12) boiled till soft but not soggy. Blanch them in ice water (means drop them in ice water to cool them off and seal in nutrients). Take out, set aside and let dry a bit on paper towels. Chop up 2 tomatoes (more if you like), shave half an onion (means to cut grid pattern in onion and shave off small bits), chop up about half the little package of fresh chives you get at walmart, drop all of that into a bowl. Add 2-4 tbl of vinegrette dressing of your choice (I use the lightest there is which has about 40 cal a tbl). The whole dish before you divide up among 2-4 people has between 225 and 185 calories in it (depending on how much vinegrette you put in it). Patrick is nuts about this one. It's served cold like salad and it's really good. I usually make it w/ steak.

No fail Broiled steak... guaranteed to not be dry and will taste awesome as well as be low cal. Ok, I know there are people out there (my family mostly) who hear broiled in front of steak and immediately turn up their nose. This is really good, ask Amanda, she's had a taste and will tell you it's really good. First I buy the steak at walmart that has very little fat on it. It costs about 13$ a package. Has four steaks in it. Take it home and cut those four steaks in half cause they are 8 oz. and a serving is 4 oz. I freeze them individually (cause I make em one at a time usually). When you are ready to make them... DO NOT THAW!!!! That's the secret... Do not thaw them out. Turn your stove on Broil to High. Get out the broiling pan and put the steaks on the pan frozen. Broil on first side for 3 minutes. Take out and turn over, broil on second side for 3 minutes. Now here is where you can add fresh garlic. I do this sometimes (there are 4 cal in a clove of garlic.. I usually use 3 per steak). If you are going to add garlic chop it finely and put it on the first side of the steak (the side you cook first so this means flip it). This is also when I put red peppers and onions on the broiler too, to roast them. Roasted red peppers are awesome. Anyway, broil again for 3 mins. Turn over put garlic on the other side and broil for 3 more mins. You should have a steak that is well done, juicy, and really good. If you like them rare you'll have to adjust cooking times. I usually change the last times to 2-2 1/2 mins for patrick steaks cause he likes em medium rare. So for that it's 3, 3, 2, 2. Anyway, it turns out really good. Try it. calorie count for the steak without the garlic is about 230.
