TOFU SLOPPY JOES
Don't let the name frighten you. This is amazing. I can't believe how good this is. Zippy, healthy and wonderfully textured and a nicer treat the day after. Yummmmy!!! I double this and freeze it in portions.
Ingredients: 1/2 lb extra firm tofu 1 - 5 1/2 oz can of Tomato Paste 1 - 2 cans water (use the Tomato Paste tin) 2 tbsp ketchup 1 tbsp rice vinegar 1 tbsp oil 1 tbsp molasses 1 small onion 6 cherry tomatoes chopped or 1 medium tomato, chopped 1 large mushroom, sliced thin 1 tbsp mustard powder pepper, hot pepper flakes and basil to taste, however, I add about 3-4 tbsp hot pepper flakes 2 tbsp Worcestershire Sauce dash of hot sauce (not tobasco) I use Blair's Hot Sauce Method: Heat oil and add molasses in an electric fryer if possible at 200 F. Crumble in the tofu and brown but keep stirring so you don't burn it as tofu burns easily. Add the tomato paste and mix well adding the water to bring to desired consistency of a sloppy joe. Sir in the mustard...mix well. Add the onions and tomato then the spices. Stir in the mushrooms, ketchup and vinegar. Simmer for 30 min minimum longer covered. Serve over onion buns or keisers. For the next day, put back in fryer and reheat and spoon over buns when heated through. Surprisingly excellent!!!!
