Is there anything that quite compares to the yumminess of shortbread cookies???????  The sinful, fattening delight that mostly appears at Christmas.  Here is a good recipe that is almost failsafe.

Ingredients:

1 cup all purpose flour
2 1/2 tbsp cornstarch
1/8 tsp salt
1/2 cup butter, room temp
1/3 cup granulated sugar
1 tsp vanilla
1/2 cup finely chopped walnuts (optional)

Frosting (optional)

1 lb icing sugar
2 large eggs
food colouring
sprinkles and whatever else you can think of to put on top

Method:

Preheat oven to 350 F.

Sift the first three ingredients into a medium sized bowl.

Add butter, sugar and vanilla to a large bowl.  Using an electric mixer, beat on high until fluffy, then reduce speed to low.  Slowly add in the flour mixture; continue beating until dough forms.  Then add walnuts if you are usinh them.

Remove dough from bowl and place between two sheets of wax paper, flatten and roll it until dough is 1/4 inch thick.  Remove the top page of paper and cut out shapes.

Bake cookies on ungreased sheet with 1/2 inch space between cookies.  Cookies are done when they are JUST STARTING to brown and feel firm to the touch (approx. 20 min).  Cool on wire racks.

If using icing sugar, combine sugear and egg whites in a bowl with electric mixer on low until the sugar is completely moist.  Increase speed to high and beat for 5 minutes or until stiff peaks form.  If you wish to colour the icing, divide the icing into small bowls and add colouring.  Decorate as desired.

Makes 20 cookies.
