Broad Beans Salad (Bigilla)
Ingredients:

500 g of broad beans (1-2 pkgs)
olive oil roughly 1/4 - 1/2 a cup
chopped parsley
salt & pepper
chopped garlic (not minced - I put 1 whole head)
pinch of baking soda

Method:

If you are using dried broad beans you must first soak them in salted water for two days with the baking soda mixed in.  The water must be changed after the first day.  This will soften the beans.  After the second day, cook the beans in fresh water.  Bring the water to a boil and let simmer until the beans are cooked.  Drain and mash the beans with a fork.  Mash them until they are like a paste but not completely smooth.  Mix in the olive oil.  Don't put so much that the paste looks oily, you just want a nice texture.  Add in the rest of the ingredients (of course the garlic is measured to your liking but we like more, as well, the garlic should be between a chopped and a minced).  Not too big and not too small.  MMMMMMMMMMMMMMMMMMMMMMMM  Great stuff!!!!!!!

We used to love this (still do) as kids.  Mom used to serve it with artichokes (oh-oichies), anchovies, tomato paste and bigilla!!!!  A wonderful bean salad for any occasion just beware....there is a ton of garlic!!!
