| Wonderful Whitefish |
| Recently, Michelle's sister's husband Ron gave us some whitefish. Whitefish can be roughy, halibut, sea bass. I took a simple recipe and added some things I thought would taste good and it was fantastic and easy. Try it ... it's great but a touch fattening. |
| Ingredients: 2 whitefish filets 1/4 cup flour 2 tbsp oil (olive oil is best) salt and pepper to taste Sauce: 1/4 cup capers, drained 1/2 cup white wine (dry) 3 tbsp butter 1/4 cup lemon juice 2 tbsp parsley, dried 1/2 tsp thyme, dried 1/2 tsp dill weed, dried hot pepper flakes to taste - optional Method: Mix your flour, salt and pepper in a pie plate. Coat both sides of each filet and fry in oil on med/high setting till lightly browned on each side. Transfer to a serving dish, cover with foil and set aside. In a small fry pan put your butter, capers, wine, lemon juice and herbs. Cook over med heat until reduced in 1/2 (approx. 4 min). Spoon over the fish and serve with your favorite rice or potato even. Serves 2-4 |
