| TANDOORI CHICKEN |
| I discovered this recipe long ago and make it on occasion as it is best if marinated for the full 12 hours. It is extremely good if you are an Indian food lover. |
| Ingredients: 16 - 20 chicken thighs (or pieces) 2 large onions, chopped fine 5 cloves garlic, crushed juice of 3 lemons or 1/4 - 1/2 cup lemon substitute (what I use) 1 tsp salt 1 1/2 cups plain yogurt 2 tbsp ground corriander 2 tsp tumeric 3 tsp ground chili pepper 1 tsp mustard powder red food colouring (optional) few drops Method: Deskin the chicken and prick it with a fork numerous times. Mix the onions, garlic, lemon juice and salt together and rub on the chicken pieces. Let stand 30 minutes Combine yogurt, spices and food colouring and pour over the chicken, stirring to coat all pieces. Cover and marinate for at least 12 hours. Cook chicken over glowing coals (or on bbq) for 20 to 30 minutes until cooked. Serves 4 well. |
