SPICY MARINATED SIRLOIN STEAK WITH SHRIMP & CREAM SAUCE
Another great find of mine.  I came up with this one day when some friends (thanks Russ and Karen) brought me a box (close to 10 lbs me thinks) of shrimp.  Problem...I had to defrost the whole thing and use it at once.  This is one of the recipes I came up with once I looked at 4 different cook books and thought to combine the recipes and add some flare.  Great for 2 - 3 people - and a colon filler for certain.
Ingredients:

1 bonesless sirloin steak (3 - 4 lbs - a big sucker) get your butcher to cut you one about 2 inches thick
2 tbsp (approx) of Montreal Steak Spice
8 cloves garlic, chopped - mmmm garlic
1 tbsp (approx) of cracked black pepper
3 jalepeno peppers (puree them) - this is the kicker mmmmmmm
1/4 cup olive oil
1/2 cup orange juice (I use Tropicana)
1/4 cup soya sauce (don't bother making this recipe unless you get the good Kikkomann soya  not the cheapie Kikkomann or other types)

Shrimp Cream Sauce Ingredients:

1 - 1.5 lb peeled and deveined shrimp (I use a bunch of big shrimp but small shrimp may be used as well it just isn't as good in my opinion)
1/4 cup dry sherry or white wine
1 tbsp chopped regular onion
3 cloves garlic, chopped fine
1/4 cup each of fresh parsley and green onions, chopped
1/2 tsp thyme
1/2 tsp white pepper
1 tsp salt
1 tsp basil (although, in any recipe, there can never be too much basil so you may add more)
Dash tobasco (do not overdo this as you do not want the sauce to taste like hot vinegar!!)
A couple shakes of the Worcestershire sauce
2 cups whipping cream
Optional - a couple crawfish tails for presentation may be added with the shrimp

Method:

Mix the spice, garlic, cracked pepper and jalepeno's together (wear gloves it may burn you as I discovered) eep.  Rub the mixture all over the steak.  I cut some slits (not many) and put some garlic right in there but you don't need to.  Make sure you push the seasoning into the flesh of the steak.  Place in a large glass dish (I use a lasagna pan).

Okay next you mix the oil, juice and soya together in a separate bowl.  Make sure the soya is Kikkomann's good stuff not the cheapie nasty stuff.  Pour this over the steak and marinate for 4 - 6 hours.  I flip it half way through.

Preheat BBQ grill to high.

Cook meat to desired doneness.  You may baste with the remainder of the sauce but I just discarded it as there is a lot of taste already there and you don't want to overpower the cream sauce.  When done cooking let sit a few minutes then slice thinly.

MEANWHILE INSIDE THE KITCHEN

Melt the butter and add the onions, parsley and garlic.  Saute for a couple minutes.  Add the thyme, pepper, salt, tobasco, Worcestershire, basil, shrimp and crawfish if you are using crawfish.  Saute for 5 minutes (this reduces the liquids).  Then add the whipping cream and saute for a further 3 minutes.  Make sure this sauce is done at the same time as the steak.

Pour over the thinly sliced steak.  Oh it is so good.  I recommend either a Merlot (red wine) or a Verdicchio  (white) as this is a meat and seafood combination.  I prefer the merlot as this is mainly a steak dish.

Serves 4 people or so.
