| Squash in an Orange Pineapple Sauce |
| This is a very nice change for squash but the smell it brings to your house is phenominal. A wonderful fall dish to make to cinnamon up your day. |
| Ingredients: 2 whole acorn squash 4 tbsp. butter 1/2 cup pinapple juice 1/2 cup orange juice squirt of lemon 4 tbsp. cornstarch 1 tsp. cinnamon 1 tsp. cloves 1/4-1/2 cup brown sugar (to taste) Method: Pierce the squash many times (after washing of course) and put in the microwave on top of papertowels. Nuke for 6 minutes. Preheat your oven to 350 F. Cut off the ends of the squash. Start slicing 1" slices across the width. Empty the seeds as you get to them. The slices will look very pretty like flowers because you are cutting them crosswise. Arrange in a baking dish. Set aside. Mix the rest of the ingredients in a mixing bowl and pour over the slices. Bake for 35 min basting every 10 min or so. Serves 4. |
