SOUTHERN POTATO SALAD
This recipie is a tradition in the "South" and was passed to me by my friend John.  I made it for my nephew's 4th Birthday and everyone loved it.  I measured out your ingredients to what I felt worked and changed it a bit.  Thanks bunches John!!!!
Ingredients:

8 large potatoes
2 tbsp prepared mustard
1 cup mayo (I use Helman's Real)
Diced Celery (optional - to taste)
Minced green bell pepper (again optional - to taste)
1/2 minced onion (medium)
Minced red bell pepper (again optional - to taste)
Pepper & Salt to taste
6 eggs boiled and chopped
2 tbsp relish (this is the kicker!!!)
Paprika - cover top for colour

Method:

Cube and boil potatoes.  In a separate bowl combine all the remaining ingredients.  When potatoes are cooked, drain and place in bowl.  Add mixture and toss lightly.  Sprinkle top with paprika.  Personally, I did not use any peppers or celery but added about 3 tbsp relish...it was amazing.
