| SPAGHETTI OMLETTE |
| This is a very old recipe. My Grandma told me she used to make it in Malta during the war (well...without the fake crab). She would make it for me when she lived with us and now is one of my comfort foods. Enjoy. |
| Ingredients: 6 cloves garlic, chopped fine 2 - 3 eggs 1 - 1 1/2 cups cooked spaghetti 1/8 cup parmesian cheese fresh ground pepper (or preprocessed) 2 tbsp olive oil (or so) fake crab to taste (that pollock combo stuff with the pink top and white bottom), chopped - OPTIONAL Method: Cut your fake crab stuff and set aside. Put your cooked pasta in a bowl and add your eggs, half of the garlic (I honestly use closer to 8 cloves), parmesian, fake crab if you are using it and the pepper. Using a fork, mix it well. Heat a fry pan with olive oil. Poor the spaghetti mixture in and sprinkle the remaining garlic and sprinkle some parmesian on top. Cover and cook for approximately 10 min. Watch it constantly and carefully to ensure the bottom doesn't burn but gets golden brown. Once and a while lift the lid and slide a spatula underneath and take a peek. Once the bottom is golden brown (about 10 min) flip the omlette over and sprinkle more parmesian. Cook uncovered until bottom is a golden brown (10 more minutes maybe). Watch it carefully. Put on a plate and slice it like a pizza. Serve with parmesian cheese in a bowl on the table. Serves 2 (or 1 if you are really hungry). |
