| The other day I walked in to work to discover a plate of this wonderful delight a co-worker, Janette, had made with her 3 year old son, Cole!! It was fabulous (one of the lawyers actually did a little dance when he first tasted it). If you like Skor bars you will LOVE this delight...just in time for Christmas and very easy to make. Leave these with a glass of milk for Santa!!! |
| Ingredients: 1 box unsalted soda crackers (Saltines) don't worry you won't use the whole box 1 cup butter (no you can't use margarine) 1 cup brown sugar 1 - 1 1\2 bags of milk chocolate chips 2 bags sliced almonds (or slivered) Method: Cover a small to medium cookie sheet with aluminum foil (shiney side up), being careful to tuck and smooth in corners. Preheat oven to 350 F. Spray with non-stick cooking spray (Pam where are you tee hee). Line the entire sheet with crackers, breaking off to fit where necessary. Note....if you are using a large cookie sheet you may need to increase in equal increments the amount of brown sugar and butter. I would start with 1/2 cup increments. Melt the butter and sugar together over a low heat in a small saucepan, boil for three minutes and pour over crackers. Bake for five minutes at 350 F. ** DO NOT OVERCOOK** Remove from oven and sprinkle with chocolate chips, quickly spreading it smooth. Sprinkle with almond flakes and lightly press down all over with a fork so the almonds stick well. Freeze for an hour or until firm. Remove the foil and break into small pieces. Store in an airtight container in the fridge. MMMMMMMMMMMM goood!!!!! Oh and remember...if you receive a gift of chocolate or the likes it is not fattening. They are only fattening if you BUY them/make them yourself. However, if you buy chocolates and GIVE them to a friend and they offer you one it is free calories as the chocolates are no longer yours.
