CREAM OF RED PEPPER SOUP
This is amazing.  I remember when I first had it approximately 10 years ago.  My husband's room mate at the time, Hal, made it for us.  This isn't his recipe, I was never able to get it from him.  I think I have come awfully close with this one.  It is so yummy!!!  I don't even like red peppers (or green for that matter).
Ingredients:

1 large red bell pepper, seeded and chopped
2 tbsp olive oil
1/2 cup onion, finely chopped
1/4 cup celery, finely chopped
3/4 cup potatoes, diced
1/2 tsp rosemary (or approx. 6 sprigs of fresh)
1/4 tsp fennel (for a change I use Anise Seed whole)
1/3 tsp paprika
1/2 tsp salt
1 1/2 cups 2% milk
1/4 cup water
1/4 cup white wine
1/2 cup sliced carrots
Fresh sprigs of parsley or mint for a garnish

Method:

I put all my veggies through the food processor using the slice blade.  Saute all the veggies in the oil with the seasonings for about ten minutes, stirring constantly.  Add the milk, wine and water.  Cover and simmer about 20 minutes.  Pour the soup into the food processor and blend using the knife blade, until creamy.  If you like it a little creamier add more milk.  Pour back into one pot and simmer for another five to ten minutes.  Garnish with parsley or mint and serve.
