PANCAKES

This is a recipe my mom used to make but I have altered it...for the better I think...sorry mom!!!!
INGREDIENTS:

2 eggs beaten
1 1/4 cups milk
1 1/8 cups flour
2 tbsp sugar
1 capful vanilla
2 tsp baking powder
2 tbsp butter/margarine
dash salt

METHOD:

Blend everything together in the order listed above.  Heat griddle to 300 - 350 F.  Dab a papertowl in margarine and wipe the griddle with it.  Pour circles of batter (about the size of your thumb and forefinger of each hand making a circle) and fry until the top of the pancake batter forms popped bubbles (the other side will be brown...you can lift an edge to check as well).  Then flip the pancake and brown the other side. 

Serves 3 - 4
