Orange Peel Beef
My latest Asian discovery, this dish is originally from China and is so very good.  I use clementine peels myself if they are available or a thinner peel.
Ingredients:

1 1/2 inch square x 2 of clementine/tangerine peel
2 1/2 tbsp oil
5 small dried red chillies (or to taste)
3/4 lb to 1 lb of thinly sliced sirloin steak partially frozen for easy cutting
1 small onion, chopped into 1 inch squares
Orange slices for garnish
Enough Basmati rice for 4 people (1.5 cups rice to 3 cups water is what I use)

Marinade:
1  tbsp cornstarch
2 tbsp soya sauce (the good stuff...don't skimp on soya!)

Sauce:
1/3 cup orange juice
2 tbsp Sake or dry Sherry
1 tbsp soya sauce
3/4 tsp chili garlic sauce (can be found in the asian section of any supermarket)
2 tsp sugar
1 1/2 tsp cornstarch

Method
:

Okay....so I prepare all things that need to be chopped first for quicker cooking.  Cut all your sirloin and onions now while soaking the orange peel in boiling water (do not cook it though just soak it) for about 10 minutes until it is pretty soft then slice it very thin...don't mince.  Set each ingredient aside apart from one another.

Prepare your rice as it needs to sit for 20 minutes after the boiling point and the rest of this takes about that to prepare.

Combine the marinade ingredients in the bowl and add the beef.  Stir well to coat it all.  Set aside for 10 minutes.

Combine sauce ingredients and set aside.

Put 2 tbsp of the oil in a pan and heat well.  Add the crushed chillis and cook for about 15 seconds then add the beef and fry it until it is almost cooked through...not bleeding but not done.  Remove from pan and set aside.

Add 1/2 tbsp more of oil and reheat pan.  Add the peel and onion and fry 2 minutes.  Add the sauce and cook stirring until sauce boils and thinckens.  Return the beef to the pan and simmer for 5 minutes on a low heat.  Do not burn!  Spoon the rice on a serving plate and then lay this on top ... serve hot.  Very yummy. 

Note: we love our stuff with some heat.  If you don't want so much heat then experiment with the amount of chillis...note the garlic sauce is not hot so do not reduce that amount.



This serves two people (and two kids) well.
