Octopus Stew
Ingredients:

1 octopus weighing about 2 lbs
2 tbsp oil
4 large onions, chopped
2 tbsp tomato paste
8 black olives, pitted
1 tbsp capers
1 tbsp mint
1 tsp allspice
2 - 2 1/2 cups wine (red)

Method:

Do not be put off by the slimey and unattractive uncooked octopus.  Have the place you purchase the octopus remove the ink bag and eyes if possible.  Wash the fish under running water.  Beat the crap out of it with a rolling pin or a meat hammer.  Cut the octopus into bite size pieces.  Heat the oil and brown the onions.  Add the octopus and cook slowly for a few minutes.  Then add the other ingredients and simmer slowly for at least 2 hours.  Stir from time to time.  Do not allow the stew to become dry.  Add more wine or some hot water if necessary.  There are two ways to serve this.  One way is over spaghetti.  The other is as a main dish.  Add about 5 quartered potatoes about 45 minutes prior to serving.

This is a Maltese dish my mom used to make us.  This is another version of my mom's recipe.  My brother Dave loves it.  It is very yummy.  It is a good dish for a 5 person family.  Enjoy!!
