| Mom's Maltese Sammiches |
| On a hot and sunny summer afternoon mom used to make us these wonderful sandwiches (a.k.a. sammiches) that we just loved. Very easy, light and kids will gobble em up. Good for an appetizer or as a main dish. |
| Ingredients: 3 - 4 sliced tomatoes (depending on the size of tomato) 8 slices of bread 1/2 jar of capers olive oil salt and pepper to taste Method: Whether you use regular white bread or italian bread or rye bread or french bread this is a wonderfully easy dish. Fill a flat saucer with olive oil. Dip your bread in (don't soak) but make sure you get the olive oil on the one surface then set aside. Do this for all your bread slices. Sprinkle with salt and pepper (remember not too much salt as you are using capers as well in this dish). Lay your tomatoes in a single layer on top of your bread and sprinkle with capers. I like to make sure every bite will have a caper on it. Then sprinkle lightly with pepper for appearance. Let stand 5 minutes in the fridge covered and serve chilled. Sounds simple? It is so wonderful...sometimes simplicity is best. |
