| This is a comfort food my mom used to make me. When I was very pregnant, my mommy came out to make it for me and it reminded me of when I was a child. It is so good and nutritious too. |

| INGREDIENTS: 10 oz kosksu (or small pebble shaped pasta) 1 onion 3 cloves garlic 3 tbsp olive oil 5 oz peeled broad beans 3 oz peeled tomatoes 2 oz tomato paste dash of basil, parsley 2 pints water METHOD: Chop the onion and garlic and fry in the olive oil until golden brown. Add the tomatoes (chopped) and the tomato paste. Add the herbs (you can play with this and see which you like) and water. Bring it to a boil and add the kosksu. Simmer until cooked. Add the broad beans to the mixture 10 minutes before you serve it. Serves 4 - 6 |
