| Ingredients: 1 1/2 lbs chicken breasts cut into bite size pieces (I buy skinless, boneless for ease) 2 tbsp vegetable oil 2 cloves minced garlic 1 tsp fresh minced ginger if you have it otherwise 1/2 tsp powdered 2 green onions cut lengthwise approximately 1 inch long Marinade 1 tbsp dry sherry 1/8 tsp white pepper 1 tbsp vegetable oil Sauce 1 tbsp vegetable oil Dash of red pepper flakes 1/2 cup peanuts Cooking Sauce 2 tbsp soya sauce....again Kikkomann is the best you can get here other than the stuff from Japan. Do not make this dish with crap soya sauce....right Gerene???? 1 tbsp rice vinegar or white wine vinegar 2 tbsp dry sherry 3 tsp chicken broth 2 tsp sugar 2 tsp cornstarch Method: Read carefully!!! In a bowl combine marinade ingredients except the oil then add the chicken and stir to coat. Then add the oil. Set aside for 20 minutes. In the meantime, heat the frying pan over a medium heat and add oil when it is HOT. Then add peanuts and pepper flakes. Saute briefly (watch the peanuts do not burn). Remove from pan and set aside. Then mix together all ingredients of the cooking sauce and set aside. In a frying pan put the 2 tbsp of oil over a high heat. When the oil begins to heat up add your garlic and ginger. Stir then add your chicken mixture. Fry for about 3 minutes. Add the nut mixture and onions to the pan. Stir the cooking sauce then add it to the pan too. Cook stirring constantly until sauce thickens. Serve hot!!! Feeds about 3 people. |
