| GARLIC MASHED POTATOES |
| By request I am posting the recipe to my garlic mash tatoes. These are a wonderful accompanyment to any meal (if the garlic actually gets to the potatoes as it tastes so good freshly cooked - read on you will understand better). |
| Ingredients: 3 - 4 heads (yes heads) of garlic 2 tbsp olive oil sprinkle of basil or rosemary (tarragon is nice also) 6 - 8 medium potatoes peeled (leave skin on if they are new potatoes), also, I prefer the red new potatoes but even regular potatoes taste good 2 tbsp butter 1/4 cup milk Method: Peel your potatoes and cut into large cubes. Boil until tender, set aside. Meanwhile, slice the top off each head of garlic and place them in your garlic roaster (go to the kitchen store and spend the $5.00 on this terra cotta gem). If you don't have a garlic roaster you can use a small tin plate and cover the garlic with tin foil (pierce the foil once first). Over the top of the garlic pour your oil and seasoning. Cover the roaster and roast at 375 - 400 F for 45 minutes. Uncover and let cool. Take your potatoes out of the pot (strain them) and mash em up on their own. Add butter and milk then squish in the garlic. Now, you can also serve the heads of garlic separately (without potatoes) because they taste sooooo good. Anyway, add your garlic to your potatoes and add a little more seasoning. Blend with your blender till smooth and serve. Yummmmmmmmmmy. Serves 4 - 6 |
