| FETTUCCINI ALFREDO |
| This is one of my husband's favourite dishes. |
| INGREDIENTS: 3 cups cooked linguini or favourite pasta 1 cup sliced fresh mushrooms 1 tbsp butter (you can sub margarine) 1 cup whipping cream 2 tbsp butter (this is not a typo) 2 tbsp white wine grated parmesian cheese salt & pepper, to taste dash of parsley and nutmeg METHOD: Cook pasta according to package directions. Saute mushrooms in 1 tbsp butter until tender. Heat the cream and 2 tbsp butter in saucepan until boiling. Reduce heat and simmer very slowly for no more than 2 minutes. Stir in the wine. Drain the noodles. Toss with the mushrooms, sauce and parmesian cheese. Sprinkle with salt and pepper and divide onto 6 small plates. Sprinkle with parsley and nutmeg. Serve immediately. Serves 6 |
