DANDELION JELLY
Don't just look at this recipe and say....EWWWWWW!!!  Did you know that honey bees get most of their pollen from dandelions (or so I am told).  Therefore, this jelly has a honey sort of taste to it.  It is quite devine.  Thanks to my friends at CG for suggesting it.  Give it a try (and read on for more uses for the once hated now revered weed....the dandelion).
Ingredients:

2 cups dandelion blossoms
5 cups water
Package of pectin
5 1/2 cups sugar

Method:

First, soak your dandelion blossoms to get rid of bugs or pesticides.   I use blossoms that I know are pesticide free. 

Boil the blossoms for 4 minutes (it will smell like cooking grass but don't worry it will be scrumptious).  Strain out and throw away the blossoms.  Pour 3 1/2 cups of the liquid into a large pan.  Add pectin and bring to a rolling boil.  Add sugar all at once and and boil for 1 minute stirring constantly.  Ladle into jars and seal.

Option: I do not add anything to this jelly but if you feel like adding lemon or orange flavouring then it taste pretty good too.  I like it without anything at all - except for the dandelions of course haha).

DANDELION TIPS FOR A HEALTHIER LIFESTYLE:

Don't throw away the green stems of the dandelion if you have warts because apparently the milk of the dandelion green will get rid of your wart. 

Dandelion leaves can be mixed to make a wonderful salad.

The root of the dandelion, once cleaned and dried, can be crushed and either added to coffee as an essence (chicory) or, when mixed with ground barley, as a coffee. 

Dandelion is very medicinal.
