Coconut Beef
I have been on this Thai cooking spree of late and have so many recipies to share.  This will be the first I have tweaked and changed.  This is AMAZING!
Ingredients:

1  can coconut milk
1  steak (I used rib but sirloin would do nicely)
2 slices of lime
1 tbsp fish sauce
1.5 tbsp sugar
1-2 tbsp red curry paste
1/8 cup ground peanuts, unsalted

Method:


Okay so super easy.  Cut the steak in strips of about 1 inch length and 1/4 inch thick.  Set aside.  Heat a fry pan on high and add half a tin of coconut milk.  Add the red curry paste and stir to disolve....BE CAREFUL...THIS STUFF IS HOT....my hub and I like hot stuff but 2 tbsp was VERY hot.  Cook for 5 minutes and the sauce starts to thicken.  Add the fish sauce, ground peanuts and the rest of the coconut milk.  Stir it well.  Now add the beef.  Simmer this stirring occasionally over medium heat for a few minutes.  Now add the lime and sugar and return to high heat until the sauce is thickened (it will take about 12 minutes) but you will know as the sauce will be thickened but still very visible but this sauce is a reduction sauce so you don't want too much sauce so do make sure it is reduced.  When this happens reduce the heat to medium low and simmer again for a couple of minutes.  Top with more ground peanuts as a garnish.  Serve over a bed of basmati rice.

This serves two people.
