| GLAZED CARROTS |
| These are easy and delicious. A nice change from the regular steamed carrots. |
| INGREDIENTS: 3/4 lb small or medium carrots, peeled (or 1 large bag of baby carrots) see the bottom for a nice option 1 tbsp margarine/butter 1 tbsp brown sugar dash of salt and pepper METHOD: If using bagged baby carrots put them in the steamer and steam as per the steamer's instruction book. If using long, full carrots, cut them in half both crosswise and lengthwise prior to steaming. In a small saucepan, combine butter/margarine, brown sugar and a dash of salt. Stir over medium heat until combined. Add carrots and cook uncovered about 2 minutes until glazed, stirring frequently. Season to taste with pepper. Serves 4 Option: add 2 steamed turnips and mash them together with the carrots before adding them to the sugar mixture. |
