| I discovered this gem the other day. I found a recipe and changed it all up but used some of the same ingredients. It turned out wonderful and is not that much work!! |
| Ingredients: 1 tbsp olive oil 450 g capellini 1/4 - 1/2 cup sundried tomatoes packed in oil, chopped 2 cups tomatoes chopped (you can use fresh or canned) 8 cloves garlic, minced 1/2 cup fresh chopped basil or approx 1-2 tbsp dried 2 cups mushrooms (optional) 1/2 cup chicken broth 1-2 cups broccoli, chopped in small flourettes (optional) 1/2 cup dry sherry water, salt and dash of regular oil (to boil pasta) salt and pepper to taste Method: Boil water, salt and a touch of oil. When boiling add pasta. Simmer 6 min. Meanwhile, in a large fry pan at 250 F put olive in the pan and saute the garlic. Saute for 5 min then add the tomatoes, basil, sundried tomatoes. cook 5 more minutes stirring. Stir in broth and wine along with mushrooms. Simmer 2 minutes then add the broccoli. Simmer 5 more minutes. Drain pasta and put it back in the pot. Put 1/4 to 1/2 the sauce in with the pasta and cook on very low for as long as it takes you to stir it up good. Pour into a large bowl and top with remaining sauce. Parmesian cheese is wonderful with this. Optional: For a bit of a change prior to frying the garlic, in a separate pan in 1 tbsp olive oil saute the chicken until brown and set aside. Proceed with the above recipe but when you add the broth and wine also add the chicken. Very yummy. Serves 4-6. |
