| My mother-in-law, Jean, gave me this recipe. It has been tradition in her home and we have carried it on in ours. This is the most wonderful tasting breakfast but BEWARE you must prepare it on Christmas Eve!!! |

| INGREDIENTS: 16 slices of white bread, crusts removed 16 slices of back bacon (or ham) - USE BACK BACON IF POSSIBLE 16 slices of sharp cheddar cheese (spring for a better cheddar) 6 eggs 1/2 tsp salt 1/2 tsp pepper 1/2 to 1 tsp dry mustard 1/4 cup minced onion 1/4 cup finely chopped green pepper (I put mine in a chopper) 1 to 2 tsp worcestershire sauce 3 cups 2% or whole milk 1/4 lb butter dash of red pepper (I use tobasco) Special K cereal or Corn Flakes METHOD: In a 9" x 13" buttered, glass baking dish, put 8 pieces of the decrusted bread. Add pieces to cover dish entirely (not overlapping). Cover bread with slices of back bacon, sliced thin. Lay slices of cheddar cheese on top of bacon and another layer of bread (to make it like a sandwich). In a bowl, beat eggs, salt and pepper. To the egg mixture add the dry mustard, onion, green pepper, worcestershire sauce, milk and tobasco and mix. Pour over the sandwich layers, cover the pan and let stand in the fridge overnight. In the morning, melt 1/4 lb butter and por over the top. Cover with Special K or crushed Corn Flakes. Bake uncovered 1 hour and 45 minutes to 2 hours at 350 F. Let sit 1/2 hour on top of the stove minimum before serving. We actually take it out of the stove then open the gifts and then eat breakfast. Of course, champagne and orange juice is the perfect accompanyment to this breakfast along with Bailey's Coffee. Serves 6 |
