ANGELS ON HORSEBACK
Recipes
Appetizers & Soups
I make this quite often.  People are hesitant to try them but once they do they fly off the platter.  They are so very delicious!!!!!!!  Despite the ingredients, they can be very mild or spicy depending on your taste.  Just adjust the tabasco.  I also double this recipe because I end up eating 6 before they are out the door.
Difficulty Level:
2 out of 5
INGREDIENTS:

1 can oysters (I use smoked - better flavour)
Sprinkle of lemon juice
Sprinkle of cayenne pepper
Splash of tobasco
Sprinkle of chopped basil and/or parsley (I use both)
6 full slices of bacon, half-cooked (I nuke em), sliced in half crosswise (this will make 12 smaller strips)
toothpicks
paprika (optional)

METHOD:

Put oysters in its own juices on a plate with the lemon juice, cayenne, tobasco and basil and/or parsley.

Roll each oyster in a piece of bacon and secure with a toothpick.  Place them on a baking sheet and sprinkle with a little paprika or more basil.

Bake in 400 F oven for 5 to 10 minutes until bubbling and bacon is cooked.  Serve hot.

Makes 12
