   mandarin: kong xin cai, tong xin cai, weng cai
   vietnamese: rau muong

common throughout much of china and vietnam, and perhaps elsewhere, water spinach is a tasty green vegetable that has hollow stems and narrow, pointed leaves.  wash well before cooking, because dirt and even little bugs can sometimes get inside the hollow stems.  water spinach can taste great stir-fried, boiled or steamed.
