| tomato mushroom congee a delicious and nice-looking porridge that's very easy to make. makes about 3-4 servings. 1. bring to a boil in a big pot: 1 c white rice (rinsed) 8 c water 2. when the water boils, turn down the heat and let it simmer (covered) for 20 minutes, stirring occasionally. meanwhile, prepare: 1 tomato, optionally peeled, and chopped into small chunks 4 fresh shiitake mushrooms (stems removed), sliced into thin strips 3. when the rice has been simmering for 20 minutes, add the tomato and mushrooms, and simmer (covered) for another 15 minutes, stirring occasionally. 4. when the congee is done simmering, add: salt to taste (about 2 t) enjoy! return to the veggie asia home page |
