tomato stir-fried with egg
   mandarin: xihongshi chao jidan, fanqie chao jidan

this is one of the most ubiquitous dishes throughout china, yet for some reason it is not that common in chinese-american restaurants.  so simple.

1. crack into a bowl and scramble:

      4 eggs

2. prepare:

      2 medium tomatoes, chopped into bite-size pieces
      1 clove garlic, minced (optional)

3. put a little oil into a wok or frying pan, then add the garlic and stir-fry 30 seconds to 1 minute.

4. add the tomato and stir until tomato softens.

5. add eggs and stir; while stirring add seasonings:

      1/2 T sugar
      1-2 scallions, chopped
      salt to taste
      pepper to taste
      a little
soy sauce (optional)

6. stir until eggs are just firm; serve with rice.
