thousand-year-old egg congee
   cantonese: pei dan jook
   mandarin: pi dan zhou

makes about 4 servings.

1. put in a big pot and bring to a boil, then simmer (covered) for 30 minutes:

      1 c white rice
      8 c water

2. after 30 minutes, add:

      2
thousand-year-old eggs, each peeled and chopped into eight pieces

3. simmer (covered) for 10 more minutes, then stir in:

      2 stalks of scallions, chopped into short segments
      salt to taste (about 2 t)

4. simmer for 30 more seconds, then it's ready to serve.
