| sweet pear and fungus soup mandarin: xue li yin er tang this is a sweet soup that can be served in small portions at the end of a meal, or for a snack. 1. soak in water 10 minutes or until soft: a palm-sized piece of dried white fungus (yin er, bai mu er) a small handful of "goji berries" (gou qi) (optional) a small handful of dried lotus seeds (lian zi) or nan xing (optional) 2. peel, core and chop into eighths: 2 asian pears (li) 3. cut off and discard any hard and discolored parts from the white fungus. boil some water and add all ingredients; simmer for about 1 hour. the consistency should be not too watery but not too gluey either. 4. add to taste: rock sugar (or regular granulated sugar) 5. once the sugar is dissolved, you can eat the soup either hot or cold. enjoy! return to the veggie asia home page |
