sweet lumpia dipping sauce

this is one kind of sauce used in the philippines for dipping spring rolls.  it gives a sweet and slightly sour flavor to spring rolls that are otherwise salty.

1. sautee about 30 seconds in oil:

      2 cloves garlic, chopped

2. add and stir:

      1 c water
      2 T white vinegar
      2 T ketchup
      2 T sugar
      1.5 t
soy sauce

3. when it boils, turn off and add gradually while stirring:

      2 t corn starch mixed thoroughly with 2 T water

4. continue to stir, adding:

      pineapple syrup (from a can of pineapples) to taste

5. strain, discard solids and let cool
